Lemon Velvet Cake  

1 box yellow cake mix (without pudding)

1 small Instant Lemon Pudding Mix

4 eggs

3/4 cup oil

3/4 cup water

Glaze Mix

2 cups of powdered sugar

1 Tbs. oil

1/3 cup lemon or orange juice

Put everything in a bowl and beat at high speed for 10 minutes.  Pour into a greased 13 x 9 x 2 pan and bake at 350˚ for 45 minutes.  While cake is baking you can make the glaze.

As soon as cake is done poke holes in the top with a fork. Pour glaze over the top of the cake while it is still hot.
